Food Options:

Beach & Borough
Beach and Borough is a chef-inspired idea uniquely blending the west coast subculture with Manhattan’s sandwich society. It combines the famous food traditions of New York City with the West coast’s laid back, healthy attitude. The goal of Beach and Borough is to make the ordinary sandwich extraordinary. We do this be offering carved hot sandwiches with contrasting elements such as crisp, house-made pickles and slaws, creamy spreads, and melty cheeses as well as cold “sub” sandwiches using only clean label meats, all natural cheeses, artisanal breads, and garden-fresh produce. Each item is made to order to ensure the finest quality!

Cosmos
After Sputnik launched in 1957, pop culture embraced the beginning of the “space race.” Cosmos is a throwback to this era where futuristic ideas from The Jetsons became reality as the US Space Program began to take off. Imagine dining on fresh-made pizza while being surrounded by atoms, ray guns, tail fins, and starbursts. Cosmos features on-demand, custom made pizza ready in minutes. Using only premium ingredients, the chefs hand-stretch the dough and use only San Marazano tomatoes for the sauce. There will be both traditional style pizzas and ”Americanized” pizzas like crab Rangoon, chicken alfredo, and BBQ style. Innovative flat-bread salads will also be available, combining pizza crusts with made-to-order salads. Rounding out the offerings is chicken wings with an assortment of out-of-this-world sauces and rubs.

Hen & Steer
Just as modern gastropubs have elevated traditional bar and pub fare, Hen and Steer is elevating traditional American foods to the next culinary level. Staples such as traditional hamburgers are now upgraded to on-trend specialty sandwiches featuring hand-pattied meats from local ranchers, gourmet toppings, condiments, and buns. Chicken is brined in house and hand-breaded to produce the juiciest, most flavorful breaded chicken and tenders possible. French fries and chips are served as part of our Spice Island program, were diners can choose from ten different flavors to mix and match whichever flavor profile they prefer most. All entrees and sides are familiar foods, but they have upgraded quality, presentation and flavor!

Beyond lunch, Hen and Steer prepares breakfast beyond the traditional Midwest-inspired “farmer’s breakfast.” Farm-fresh eggs and meats are still a central ingredient, but are enhanced to meet everyone’s tastes. On-the-go friendly dishes like wraps, custom-made bowls and hearty sandwiches that are high in protein and whole grains are offered spanning the entire flavor spectrum (sweet, savory, familiar, international, exotic, etc), ensuring our customers have a healthier breakfast and stay fuller, longer.

Pangea
The “original super continent,” Pangea, features classic and contemporary foods from all over the world. We use imported ingredients and old-world recipes to create an evolving concept that will open the palates of customers and attract new guests to your dining program. Pangea’s concept changes every 30 days and includes weekly customizable menus from the featured cuisine.

3 Sisters tex mex
In Native American culture, 3 Sisters refer to Corn, Squash and Beans. The three crops were often planted together as the corn could support the bean stalks, the beans provided nitrogen to the soil, and the squash spread across the ground, blocking sunlight and preventing weeds. When eaten together the three crops contain complex carbohydrates, essential fatty acids, and all eight essential amino acids – essentially replicating a protein when there is no protein available! Three Sisters features foods influenced by Native Americans and the Southwest United States. In addition to native foods, Three Sisters will also serve Tex-Mex cuisine and “Americanized” Mexican cuisine often found in Southern California, Arizona and southern Colorado (ie. burritos, street tacos, enchiladas with green chili sauce, etc).
